Making Kheer in Pressure Cooker: A step-by-step Guide

Now that we know the necessary ingredients that are required for the preparation of Kheer, let’s move into the process of preparing it. Following are the steps you need to follow for cooking kheer in a pressure cooker,

Step 1: Rinsing the Rice

The first step to begin with for cooking kheer in a cooker is to rinse the rice. For this take the desired amount of rice and rinse it under the running water until the water runs clear. Drain the rice and then keep it aside.

Step 2: Pressure Cooking the Rice

Now the next process involves pressure cooking the rice. For this add the rinsed rice in the pressure cooker and also add milk into it. Then close the lid of the pressure cooker and cook the mixture of rice and milk until two whistles on medium heat.

Step 3:  Adding Sugar and Milk

When the pressure is released from the cooker, slowly open the lid of the cooker. You’ll now need to mash the rice lightly. When the mashing is completed, add a few cups of milk into the cooker again along with sugar. The amount of milk to be added depends upon the consistency you require.

Step 4: Cooking the Kheer

After adding milk and sugar to the mashed rice, stir the mixture well and simmer it over low heat. Make sure that you keep stirring constantly so that the rice does not stick to the base of the pressure cooker. It normally takes 15 to 20 minutes for the kheer to reach the desired level of consistency.

Step 5: Adding Flavourings

After you get the desired level of consistency in the kheer, it’s finally time to add some flavourings to it. For this add some cardamom powder into the kheer and stir it well. Also, add the chopped nuts such as cashews and almonds into the kheer. You can also add saffron for garnishing the kheer.

Your kheer in the pressure cooker is now cooked and ready to serve. You can serve the pressure cooker cooked kheer warm, chilled, or as per your desire.

Use a heavy-bottomed pressure cooker

In order to prevent milk from sticking and burning of milk and rice at the bottom of the pan, make sure you choose a heavy-bottomed pressure cooker. Scorching can result in burnt flavour and ruin the taste of kheer.

Consider the cooking time

The cooking time involved in kheer can vary upon the pressure cooker and heat level. Consider the cooking time of Kheer and start with a shorter cooking time. Overcooking the kheer may lead to it becoming very thick or burnt.

Stir Occasionally
